Dumbarton Rock and Castle
Dumbarton Castle has the longest recorded history of stronghold in Scotland.  Even as far back as the Iron Age there is archaeological evidence of settlement.  Most of what you see today dates from the 18th century but the castle had many incarnations between the Iron Age and that time.
